The “Pane Toscano DOP” (Tuscan bread from Protected Origin) is the only DOP at the regional level that covers the whole Tuscany region and is characterized by the quality of exclusively Tuscan flours and by the maintenance of wheat germ and mother yeast made and certified by the University of Pisa.
